It Friday today yippy!!!! The weather here yesterday was crazily hot. It from 8oC (Monday) to 10oC (Tuesday) to 16oC(Wednesday) to 28oC(thursday) and today is predicted for 24oC. I am really suffering from hayfever for the last couple of days, I am allergy to tree pollen because it has taken so long to warm up in London the trees have gone mad in the heat and release a shed load of pollen. My once a day antihistamine isnt strong enough and I too wheezy to do my most favourite gym class tonight - Body combat, great for stress relief. You just imagine the face of the person who was winding you up all day and you punch and kick the image like crazy for a whole hour - brilliant!

Mediterranean Cous Cous wtih Feta Cheese
250g of Cous Cous
300ml of boiling water (or stock if you want to make it really tasty)
1 Jar of Pasta Sauce (I used Sainsbury's Sun dried tomato and Chili sauce but any pasta sauce will do)
1 small can of Green Giant Sweetcorn
1 medium red onion (chopped into small pieces, you can add any vegetables you like such as courgettes, red & green (bell) peppers)
Olive Oil
Garlic
In a pan add the cous cous and boiling water together. Put a lid on and leave (some packets of cous cous say to cook the cous cous but I find it tend to burn to the bottom of the pan) for at least 15 minutes
Add a little olive oil to a frying pan, add the minced garlic (I used about 2 cloves but it depends on how garlicky you like things).
Once the garlic has had a chance to release its flavour, add the onion, sweetcorn and any other vegetables you like. Stir fry for about 3-4 minutes.
Add the jar of pasta sauce (you could add homemade pasta sauce but I am too lazy some times) to the vegetables and allow to simmer for about 5 minutes (the vegetables should be soft when the time is up)
Add the vegetable & sauce to the cous cous (which will be nice a plump by now)
Add the crumbled/cubed feta cheese into the cous cous mixture, mix well and put the lid back onto the cous cous for a further 10 mintues.
After 10 minutes, the cous cous is ready to serve. The heat of the sauce will have cause the feta to melt a bit - delicous! This can be eaten hot or cold, lovely with grilled, BBQ'd meats and fish!

Made a bit of a messing making my bento last night, I came home late, I had to go to the gym for an unwinding sessions after being off site meeting with clients (no bento made yesterday, was taken out for lunch courtsey of work had a yummy steak with chips and salad. Chips are so lovely after giving them up for lent). I thought I had fish balls in the freezer (was going to make fried noodles with fish balls) but discovered I didnt have any left so I cooked a couple of eggs to discover that I had stuffed too much in the lower tray. Had to squosh everything down and hope for the best - eggs look mushy now :0(
Hopefully they wont taste as bad as they look!

Left Top: Basmati rice (left over from curry last night) topped with spam drizzled in soya sauce (forgot to sprinkle it with furikake seasoning this morning)
Left Bottom: Green Monchi filled with red bean paste, Yellow Monchi filled with custard, 3 jelly babies and half moons of cucumber

Right: Tuna onigiri with wasabi furikake seasoning and nori handles (I used sushi rice instead of plain rice as I like the taste better, not sure if this is traditional way of doing it)
Left: Slice of cucumber, pickled baby beetroot (Sainsbury's Taste the Difference - more spicy than the usually pickles and sweeter), dried mixed fruit salad and Heinz salad cream to serve with cucumber.
